Wine-
making process :
A pressing right after the harvest.
A cold alcohol fermentation ( 18°C
/ 64.4F ) to keep the best fragrances.Two
rackings in order to eliminate the
biggest sediments that may spoil the
fruity fragrances and the future taste
of the wine. A cold malolactic fermentation
for 3 to 4 months ( 15°C/ 59°F)
to let the wine fermentation slowly
mature to avoid any problem of bad
taste ( lees ). |

Comments
on the tasting :
A bright yellow colour. A fruity,
flowery nose. A rich passion fruit
palate. You can keep it for 2 to 4
years and it will go well with seafood
and fish. |
